Description

These Secretly Healthy Chocolate Raspberry Truffles are a guilt-free treat combining rich dark chocolate, creamy avocado, and fresh mixed berries, sweetened naturally with pure maple syrup. Coated in vibrant freeze-dried raspberry dust, they offer a decadent flavor experience while keeping ingredients wholesome and nourishing. Perfect for a quick snack or elegant dessert that satisfies chocolate cravings without refined sugars.

Ingredients

Chocolate Mixture

  • 3/4 cup good quality dark chocolate (73% cacao recommended)
  • 1/2 ripe avocado
  • 1/4 cup mixed berries
  • 2 tablespoons pure maple syrup (or erythritol/liquid stevia for keto)
  • 1/2 teaspoon pure vanilla extract
  • Pinch of salt

Coating

  • 1/3 cup freeze dried raspberries

Instructions

  1. Melt the Chocolate: Use a double boiler or a saucepan over low heat to slowly melt the dark chocolate. Stir regularly and remove from heat just before fully melted to prevent burning. Alternatively, melt the chocolate in the microwave in 15-second intervals, stirring between each until smooth. Allow it to cool slightly.
  2. Prepare the Fruit Base: Add the ripe avocado, mixed berries, and vanilla extract to a food processor or blender. Blend until the mixture is completely smooth and creamy.
  3. Combine Ingredients: Drizzle the melted chocolate, maple syrup, and a pinch of salt into the blender with the avocado mixture. Process until fully incorporated and smooth.
  4. Chill the Mixture: Transfer the runny chocolate mixture into the freezer. Freeze until it is firm enough to hold shape when rolled into balls, usually about 20 to 30 minutes.
  5. Make Raspberry Dust: While the truffle mixture chills, place the freeze-dried raspberries in a blender and pulse until they turn into a fine bright red powder.
  6. Roll the Truffles: Scoop a heaped teaspoon of the chilled mixture and roll it tightly into a ball using your hands, then roll the ball in the raspberry dust to coat evenly.
  7. Store and Serve: Place the coated truffles in an airtight container lined with parchment paper. Refrigerate until ready to serve for optimal texture and flavor.

Notes

  • Use ripe avocado for best creaminess and flavor balance.
  • Dark chocolate with at least 70% cacao works well but adjust sweetness to taste.
  • The recipe is adaptable for keto by substituting maple syrup with erythritol or liquid stevia.
  • Store truffles in the refrigerator up to 5 days or freeze for longer storage.
  • Handle frozen mixture quickly as it melts easily when warmed by hands.
