6–8 egg whites (or 1 cup liquid egg whites)
1 tsp olive oil or 1 tsp unsalted butter
Salt, to taste
Black pepper, to taste
Optional add-ins:
Fresh spinach, chopped
Diced tomatoes
Sautéed mushrooms
Shredded cheese (cheddar, mozzarella, etc.)
Fresh herbs (chives, parsley, dill)
Instructions
-
Whisk Egg Whites: In a medium bowl, whisk egg whites until frothy to aerate for a fluffier texture.
-
Heat Pan: Place a non-stick skillet over medium heat and add olive oil or butter. Swirl to coat evenly.
-
Cook Egg Whites: Pour in egg whites. Let sit for 30 seconds until edges start to set.
-
Scramble Gently: Using a silicone spatula, push cooked edges toward the center. Let uncooked whites flow to the sides, repeating until soft curds form.
-
Season & Add-Ins: When mostly set but still slightly moist, season with salt and pepper. Fold in any optional ingredients.
-
Finish Cooking: Remove from heat slightly underdone; residual heat will finish cooking.
-
Serve Immediately: Plate and enjoy warm.
Notes
-
Avoid overcooking to prevent rubbery texture.
-
Use liquid egg whites from a carton for convenience (check for 100% egg whites).
-
For a flavor boost, sauté aromatics like garlic or onion before adding eggs.
-
Best enjoyed fresh but can be stored in the fridge for up to 24 hours.
