Ingredients

Salt, to taste

Black pepper, to taste

Sautéed mushrooms

Shredded cheese (cheddar, mozzarella, etc.)

Fresh herbs (chives, parsley, dill)


Instructions

  • Whisk Egg Whites: In a medium bowl, whisk egg whites until frothy to aerate for a fluffier texture.

  • Heat Pan: Place a non-stick skillet over medium heat and add olive oil or butter. Swirl to coat evenly.

  • Cook Egg Whites: Pour in egg whites. Let sit for 30 seconds until edges start to set.

  • Scramble Gently: Using a silicone spatula, push cooked edges toward the center. Let uncooked whites flow to the sides, repeating until soft curds form.

  • Season & Add-Ins: When mostly set but still slightly moist, season with salt and pepper. Fold in any optional ingredients.
