Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup smooth peanut butter
  • 1 ½ cups heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons butter

Instructions

  • Prepare the crust: In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a 9×13-inch baking dish to form a crust. Chill in the refrigerator while you make the cheesecake layer.
  • Make the cheesecake layer: Beat softened cream cheese, powdered sugar, and peanut butter until smooth. In another bowl, whip heavy cream to stiff peaks and fold it into the cream cheese mixture.
  • Assemble the bars: Spread the cheesecake mixture over the chilled crust, smoothing the top.
  • Prepare the topping: In a microwave-safe bowl, melt chocolate chips and butter in 30-second intervals, stirring until smooth. Pour over the cheesecake layer and spread evenly.
