Sacher Torte is an iconic Austrian dessert made of a dense chocolate cake filled with apricot jam and covered in a glossy chocolate glaze. It’s the perfect balance of sweet, rich chocolate, and the tangy apricot filling, creating a deliciously indulgent dessert that’s perfect for special occasions.
Ingredients
- 1/2 cup unsalted butter, softened
1 cup granulated sugar
6 large eggs, separated
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 cup unsweetened cocoa powder
1/2 cup dark chocolate, melted (about 4 oz)
1/4 teaspoon salt
1/2 cup apricot jam or preserve
1/2 cup heavy cream
6 oz dark chocolate (at least 60% cocoa), chopped
2 tablespoons unsalted butter
Whipped cream (optional, for serving)
Instructions
Preheat the oven to 350°F (175°C) and grease and line a 9-inch round cake pan with parchment paper.
- Cream together the butter and sugar until light and fluffy. Add egg yolks one at a time, beating well after each addition. Stir in vanilla extract.
- Sift together flour, baking powder, cocoa powder, and salt. Gradually fold into the butter mixture until just combined.
- Beat the egg whites until stiff peaks form and gently fold them into the batter in three additions. Fold in the melted dark chocolate.
- Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean. Let it cool for 10 minutes before transferring to a wire rack to cool completely.
- Slice the cake horizontally into two layers. Heat apricot jam until liquid and smooth, then spread over the bottom layer before placing the top layer back on.
- To make the glaze, heat heavy cream over medium heat. Add the chopped dark chocolate and let it sit for 1-2 minutes, then stir until smooth. Add butter and stir until glossy.
- Pour the glaze over the cake, smoothing it over the top and sides. Let it set for 1 hour or refrigerate for 15-20 minutes to set faster.
- Serve with whipped cream if desired and enjoy!

- For a citrusy twist, add a splash of Grand Marnier or orange liqueur to the apricot filling or cake batter.
