Description
Roquefort Pear Salad is an elegant dish combining creamy Roquefort cheese, sweet pears, fresh greens, and a tangy vinaigrette, making it a perfect balance of savory, sweet, and earthy flavors.
Ingredients
- 4 cups mixed greens (such as arugula, spinach, or baby kale)
2 ripe pears, peeled, cored, and sliced
1/4 cup Roquefort cheese, crumbled
1/4 cup candied walnuts or pecans (optional)
1/4 red onion, thinly sliced (optional)
For the vinaigrette:
2 tablespoons white wine vinegar or balsamic vinegar
1 tablespoon Dijon mustard
1 tablespoon honey
1/4 cup olive oil
Salt and pepper to taste
Instructions
Prepare the vinaigrette: In a small bowl or jar, whisk together vinegar, Dijon mustard, honey, salt, and pepper. Gradually add olive oil while whisking continuously to emulsify the dressing. Set aside.
- Assemble the salad: In a large salad bowl, combine mixed greens, sliced pears, crumbled Roquefort cheese, candied walnuts or pecans (if using), and red onion (if using).
 - Dress the salad: Drizzle the vinaigrette over the salad and toss gently to combine, ensuring all ingredients are coated with the dressing.
 - Serve immediately as a light meal or a side dish, and enjoy!

Notes
- For a vegan version, omit the Roquefort cheese and use a plant-based cheese or nutritional yeast for a cheesy flavor.
 - Try substituting pears with apples, figs, or pomegranate seeds for different seasonal twists.
 - Make the vinaigrette ahead of time and store in the refrigerator for up to 3 days.
 - If using fresh pears, toss them with lemon juice to prevent browning.
