Ingredients
- 2 boneless ribeye steaks (about 1-inch thick)
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon soy sauce (optional for added umami)
- 1 tablespoon lemon juice (optional for brightness)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
- Heat a cast-iron skillet over medium-high heat and add olive oil. Sear the steaks for 2-3 minutes on each side until a golden brown crust forms.
- Add butter, minced garlic, rosemary, and thyme to the skillet, spooning the melted butter over the steaks.
- Transfer the skillet to the oven and roast the steaks for 6-8 minutes, or until they reach your desired doneness (120°F for rare, 130°F for medium-rare, 140°F for medium).
- Let the steaks rest for about 5 minutes before slicing to allow juices to redistribute.
- Drizzle any remaining garlic butter over the steaks and serve with lemon juice or soy sauce if desired.
Notes
- You can substitute ribeye for other cuts like filet mignon, New York strip, or sirloin.
- Add spice with smoked paprika, cayenne, or red pepper flakes.
- For extra garlic flavor, roast whole garlic cloves alongside the steak.
- Adjust herbs as preferred—try oregano, parsley, or basil.
- Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months.
