Description
Ricotta Berry French Toast Casserole is a decadent, comforting dish combining French toast, creamy ricotta cheese, and fresh berries. Perfect for brunches, holiday gatherings, or weekend breakfasts, it’s easy to prepare the night before, making it ideal for hassle-free mornings.
Ingredients
- 1 loaf of day-old French bread, cut into 1-inch cubes
1 1/2 cups ricotta cheese
1 cup milk
4 large eggs
1/4 cup sugar
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
2 tablespoons unsalted butter, melted
2 tablespoons powdered sugar (optional, for dusting)
Instructions
Grease a 9×13-inch baking dish with butter or cooking spray.
- Place the cubed French bread in the baking dish, spreading it out evenly.
- In a large bowl, whisk together the ricotta cheese, milk, eggs, sugar, vanilla extract, cinnamon, and salt until smooth and well combined.
- Pour the ricotta mixture evenly over the bread cubes, pressing the bread down gently to ensure it’s fully soaked.
- Scatter the mixed berries over the top of the bread and custard mixture.
- Cover the casserole with plastic wrap or foil and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the bread to soak up the custard.
- Preheat your oven to 350°F (175°C).
- Remove the casserole from the refrigerator and uncover. Drizzle the melted butter over the top of the casserole.
- Bake for 45-50 minutes, or until the casserole is golden brown and the custard has set.
- Once baked, let the casserole cool for a few minutes before serving. Optionally, dust with powdered sugar before serving.
