Ingredients
Peanut Butter Mixture
- 1 cup peanut butter
- 1/4 cup butter
- 1 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
Chocolate Coating
- 16 ounces chocolate (semi-sweet or milk chocolate chips or chopped chocolate)
- 2 tablespoons butter
Instructions
- Prepare Peanut Butter Mixture: In a medium-sized bowl, combine 1 cup peanut butter and 1/4 cup butter using a mixer until smooth and well blended.
- Add Dry Ingredients: Mix in 1 3/4 cups powdered sugar and 1 teaspoon vanilla extract until fully incorporated, resulting in a firm dough-like mixture.
- Shape the Eggs: Using about 1 tablespoon of the peanut butter mixture for each, hand shape into egg forms. Place these eggs on a cookie sheet lined with waxed paper. Refrigerate for approximately 30 minutes to firm up before coating.
- Melt Chocolate Coating: Melt 16 ounces of chocolate in a double boiler or microwave in 30-second intervals, stirring between each until smooth. Add 2 tablespoons butter and stir to combine for a glossy finish. Set aside to keep warm.
- Coat the Eggs: Remove peanut butter eggs from refrigerator. Gently dip each egg into the melted chocolate, fully covering it. Place them back onto the waxed paper to set.
- Set and Serve: Allow the chocolate coating to harden at room temperature or refrigerate briefly until firm. Once set, the peanut butter eggs are ready to enjoy.
