Description
A vibrant and easy-to-make Red, White, and Blue Puff Pastry Breakfast Tart featuring a flaky puff pastry base topped with a creamy sweetened cream cheese layer and fresh mixed berries, perfect for a festive morning or brunch.
Ingredients
Puff Pastry
- 1 sheet puff pastry, thawed
Cream Cheese Filling
- 150 g cream cheese
- 3 tbsp double cream
- 3 tbsp icing sugar (powdered sugar)
Toppings
- 400 g mixed berries (such as strawberries, blueberries, raspberries)
- Additional icing sugar for dusting
- 1 egg (optional, for egg wash)
Instructions
- Preheat Oven: Preheat your oven to fan-assisted 180°C / 200°C / 400°F / gas mark 6 to prepare for baking the puff pastry.
- Prepare Puff Pastry: Take the thawed puff pastry sheet and score a half inch border around the edges without cutting all the way through. Prick holes within the inner section using a fork to prevent puffing.
- Apply Egg Wash (Optional): For a golden crust, lightly brush the edges of the puff pastry with beaten egg wash before baking.
- Bake Puff Pastry: Place the puff pastry on a baking tray and bake in the oven for 18 minutes until puffed and golden. Remove from the oven and let it cool completely.
- Prepare Cream Cheese Filling: In a bowl, combine the cream cheese, double cream, and icing sugar. Whisk thoroughly until the mixture is smooth and creamy with no lumps.
- Assemble Tart: Spread the cream cheese mixture evenly over the cooled puff pastry, staying within the scored border.
- Add Berries and Finish: Top the creamy layer generously with mixed fresh berries. Lightly dust with additional icing sugar for a sweet finish.
- Serve: Slice the tart into 6 portions and serve immediately for a delicious, colorful breakfast or brunch treat.
Notes
- Make sure the puff pastry is fully thawed before scoring and baking to prevent cracking.
- For extra flavor, add a splash of vanilla extract to the cream cheese mixture.
- Fresh berries can be substituted or combined according to preference and seasonality.
- Serve chilled or at room temperature.
- Use cold double cream to help achieve a light and smooth cream cheese filling texture.
