Ingredients
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 1/2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
1 cup whole milk
1/4 cup red food coloring
1/4 cup blue food coloring
1/4 cup raspberry or strawberry jam (for the red color)
1/4 cup blueberry jam (for the blue color)
Instructions
Preheat the oven to 350°F (175°C) and grease a Bundt pan with butter or non-stick spray.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a separate large bowl, beat the butter and sugar together until light and fluffy (about 3-5 minutes).
Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
Divide the batter evenly into three bowls. In one bowl, mix in the red food coloring and strawberry or raspberry jam. In another bowl, mix in the blue food coloring and blueberry jam. Leave the third bowl plain (white).
Drop spoonfuls of each colored batter into the Bundt pan, alternating colors. Use a knife or skewer to swirl the colors together to create a marbled effect.
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely before serving.
Notes
-
You can substitute vanilla extract with almond or lemon extract for a different flavor profile.
-
For added sweetness, try adding chocolate chips or a drizzle of chocolate glaze on top.
-
Fresh fruit purees can be used instead of jams to make the cake a bit healthier.
-
If you don’t have a Bundt pan, this recipe can be made in a round or square cake pan.
