Description

These Red Velvet Nutella Sweet Rolls are a decadent twist on classic cinnamon rolls, featuring a rich red velvet dough swirled with creamy Nutella and topped with a luscious cream cheese frosting. Perfect for breakfast, brunch, or dessert, these rolls are soft, moist, and bursting with chocolate and hazelnut flavor in every bite.

Ingredients

Dough

  • 1 cup warm milk (about 115°F)
  • 2 1/2 teaspoons instant dry yeast (Red Star Platinum Baking Yeast recommended)
  • 2 large eggs (room temperature)
  • 1/2 cup butter (melted)
  • 1 ounce red food coloring
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 4 to 4 1/2 cups all-purpose flour (divided)

Filling

  • 3/4 cup Nutella hazelnut spread

Topping

  • 1/2 cup heavy cream (for pouring over the risen rolls)

Cream Cheese Frosting

  • 6 ounces cream cheese (softened)
  • 1/3 cup butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla extract
  • 1/3 cup Nutella hazelnut spread (for drizzling)

Instructions

  1. Activate Yeast: Pour the warm milk into the bowl of a stand mixer, then sprinkle the instant dry yeast over the milk to activate it.
  2. Add Wet Ingredients: Add the eggs, melted butter, unsweetened cocoa powder, red food coloring, salt, and granulated sugar to the yeast mixture.
  3. Combine Flour: Add 4 cups of the all-purpose flour and mix lightly with the beater blade just until ingredients are barely combined. Let the mixture rest for 5 minutes to hydrate the flour.
  4. Prepare for Kneading: Scrape the dough off the beater blade and remove it. Attach the dough hook to the mixer.
  5. Knead Dough: Knead the dough on medium speed, adding up to 1/2 cup more flour if needed, for 5 to 7 minutes until the dough is elastic and smooth but still slightly tacky and sticking to the bowl sides.
  6. Prepare Rising Bowl: Spray a large bowl with cooking spray to prevent sticking.
  7. Transfer Dough: Use a rubber spatula to remove the dough from the mixer bowl and place it in the greased bowl.
  8. Cover Dough: Cover the bowl with a towel or wax paper to keep the dough warm.
  9. First Rise: Place the dough in a warm spot, such as inside the oven that has been briefly warmed and turned off. Let the dough rise until doubled in size, about 30 to 45 minutes. Avoid over-proofing.
  10. Prepare Surface: Generously flour a pastry mat. Turn the risen dough out onto the mat and dust the top lightly with flour.
  11. Roll Dough: Roll the dough into a rectangle approximately 24 by 15 inches (size can vary).
  12. Spread Filling: Using a rubber spatula, evenly spread 3/4 cup Nutella over the dough rectangle.
  13. Roll Up: Starting from the long side, tightly roll the dough jelly roll style.
  14. Slice Rolls: Cut the rolled dough into 15 even slices and place them in a greased 10×15 inch baking pan.
  15. Second Rise: Cover the pan and let the rolls rise for 25 minutes or until nearly doubled.
  16. Preheat Oven: Preheat the oven to 350°F (175°C).
  17. Warm Cream: Warm the heavy cream until just lukewarm, not hot.
  18. Pour Cream: After the second rise, pour the warm heavy cream evenly over the top of the rolls to soak in.
  19. Bake Rolls: Bake the rolls at 350°F for about 25 minutes. Check at 17 minutes to ensure they are not browning too quickly; tent with foil if needed. Rolls should be cooked through in the center.
  20. Prepare Frosting: While the rolls cool, beat the softened cream cheese and softened butter together until smooth using a hand mixer.
  21. Add Flavor: Mix in vanilla extract and powdered sugar and beat until fully combined and creamy.
  22. Frost Rolls: Spread the cream cheese frosting evenly over the cooled rolls.
  23. Drizzle Nutella: Microwave the 1/3 cup Nutella in a microwave-safe bowl for 30 seconds to soften, then drizzle over the frosted rolls.
  24. Optional Decoration: Sprinkle with holiday sprinkles if desired for a festive touch.
  25. Storage: Store leftover rolls in an airtight container to maintain freshness.

Notes

  • The dough should be tacky but not overly sticky—resist adding too much flour during kneading to keep rolls soft.
  • Using warm milk and a slightly warmed oven helps create the perfect rising environment for the dough.
  • Be cautious not to overproof the dough or rolls can become too airy and collapse during baking.
  • Check the rolls early during baking to prevent over-browning; cover with foil if necessary.
  • These rolls are best enjoyed fresh but can be reheated gently before serving.
