Description

Raw Brownies are rich, fudgy, no-bake treats made with dates, nuts, and cocoa powder. Naturally sweetened and free from refined sugar, flour, and dairy, they’re a healthy and indulgent dessert or snack ready in minutes.

Ingredients

  1. 2 cups Medjool dates, pitted
  2. 1 1/2 cups raw walnuts or almonds
  3. 1/2 cup unsweetened cocoa powder or cacao powder
  4. 1 teaspoon vanilla extract
  5. Pinch of salt
  6. 12 tablespoons water (if needed for blending)
  7. 2 tablespoons chopped nuts or cacao nibs (optional, for topping)

Instructions

Add nuts to a food processor and pulse until finely ground.

  1. Add pitted dates, cocoa powder, vanilla extract, and salt.
  2. Process until mixture is sticky and begins to clump. Add water as needed.
  3. Press mixture firmly into a parchment-lined 8×8-inch pan or small dish.
  4. Optional: Sprinkle with chopped nuts or cacao nibs and press lightly.
  5. Refrigerate for at least 1 hour to firm up.
  6. Slice into squares or bars and enjoy.

Notes

  • Soak dry dates in warm water for 10 minutes to soften.
  • Substitute sunflower or pumpkin seeds for a nut-free version.
  • Enhance flavor with espresso powder, peppermint extract, or shredded coconut.
  • They taste best chilled but can be served at room temperature.
