Instructions

  1. Soften the Jam: Place raspberry jam in a small microwave-safe bowl and microwave for 10 to 15 seconds or until the jam just begins to soften, making it easier to layer.
  2. First Layer: Arrange a layer of vanilla angel food cake cubes at the bottom of each of two (13 ounce or larger) stemless wine glasses. Add a layer of fresh raspberries on top of the cake cubes.
  3. Add Jam and Whipped Cream: Spoon 1/4 of the softened raspberry jam evenly over the raspberries in each glass, then layer 1/4 of the prepared whipped cream over the jam.
  4. Repeat Layers: Repeat the layering process with another layer of cake cubes, raspberries, jam, and whipped cream, ensuring each glass has two layers of each ingredient.
  5. Garnish and Serve: Garnish the trifles with any leftover cake crumbs, a whole raspberry, and fresh mint leaves if desired. Serve immediately or refrigerate for up to 1 hour to chill before serving.
