Ingredients
- 1 cup dark chocolate (vegan, chopped or chips)
- 1 cup fresh or frozen raspberries (plus extra for garnish)
- 1 cup full-fat coconut milk or coconut cream
- 2–3 tbsp maple syrup or agave
- 1 tsp vanilla extract
- Pinch of salt
- Optional: 1/2 cup whipped aquafaba or silken tofu (for fluffiness)
Instructions
Melt chocolate in a double boiler or microwave in 30-second intervals, stirring until smooth. Let cool slightly.
- Blend raspberries into a purée. Strain through a sieve if you prefer seedless.
- In a blender, combine melted chocolate, coconut milk, raspberry purée, maple syrup, vanilla, and salt. Blend until smooth and creamy.
- Optional: Fold in whipped aquafaba or silken tofu for a lighter texture.
- Spoon mousse into jars or ramekins and refrigerate for at least 2 hours until set.
- Serve chilled, topped with fresh raspberries, shaved chocolate, or coconut whipped cream.

- Frozen raspberries work well—just thaw and drain first.
