Ingredients
- 2 packs of ramen noodles (discard the seasoning packets)
1 lb ground beef or ground turkey
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
1 cup ricotta cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the ramen noodles according to the package instructions, but without using the seasoning packet. Drain and set aside.
- In a large skillet, heat a bit of oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened.
- Add the garlic and ground meat to the skillet, cooking until the meat is browned and fully cooked through. Drain any excess fat.
- Stir in the tomato sauce, diced tomatoes, basil, oregano, red pepper flakes (if using), salt, and pepper. Let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.
- While the sauce is simmering, mix the ricotta cheese, 1 cup of the mozzarella cheese, Parmesan cheese, and egg in a bowl. Stir until well combined. Season with a pinch of salt and pepper.
- In a 9×13-inch baking dish, spread a thin layer of the meat sauce on the bottom. Top with a layer of cooked ramen noodles, followed by a layer of the ricotta cheese mixture. Repeat the layers until all the ingredients are used, ending with a layer of meat sauce on top.
- Sprinkle the remaining mozzarella cheese over the top of the lasagna.
- Cover the baking dish with foil and bake for 20-25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Let the lasagna cool for 10 minutes before serving. Garnish with fresh basil or parsley, if desired.

- Meatless Version: Skip the ground meat and use extra vegetables, such as mushrooms, zucchini, or spinach, for a vegetarian version.
