Ingredients

  • 2 packs of ramen noodles (discard the seasoning packets)
1 lb ground beef or ground turkey
    1 onion, chopped
    2 cloves garlic, minced
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
    1/2 teaspoon dried basil
    1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes (optional)
    1 cup ricotta cheese
1 1/2 cups shredded mozzarella cheese
    1/2 cup grated Parmesan cheese
    1 egg
    Salt and pepper to taste
Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ramen noodles according to the package instructions, but without using the seasoning packet. Drain and set aside.
  3. In a large skillet, heat a bit of oil over medium heat. Add the chopped onion and cook for 3-4 minutes, until softened.
  4. Add the garlic and ground meat to the skillet, cooking until the meat is browned and fully cooked through. Drain any excess fat.
  5. Stir in the tomato sauce, diced tomatoes, basil, oregano, red pepper flakes (if using), salt, and pepper. Let the sauce simmer for about 10-15 minutes, allowing the flavors to meld together.
  6. While the sauce is simmering, mix the ricotta cheese, 1 cup of the mozzarella cheese, Parmesan cheese, and egg in a bowl. Stir until well combined. Season with a pinch of salt and pepper.
  7. In a 9×13-inch baking dish, spread a thin layer of the meat sauce on the bottom. Top with a layer of cooked ramen noodles, followed by a layer of the ricotta cheese mixture. Repeat the layers until all the ingredients are used, ending with a layer of meat sauce on top.
  8. Sprinkle the remaining mozzarella cheese over the top of the lasagna.
  9. Cover the baking dish with foil and bake for 20-25 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  10. Let the lasagna cool for 10 minutes before serving. Garnish with fresh basil or parsley, if desired.

Notes

  • Meatless Version: Skip the ground meat and use extra vegetables, such as mushrooms, zucchini, or spinach, for a vegetarian version.
  • Extra Cheese: Add more cheese layers for an even cheesier lasagna. Try adding provolone or fontina for extra flavor.
  • Spice it Up: Add more red pepper flakes or a splash of hot sauce to the meat sauce for a spicier kick.
  • Chicken Option: Use cooked, shredded chicken in place of the ground beef for a lighter alternative.
