Ingredients
Crust
- 2 ½ cups graham cracker crumbs (270g, 9.5oz)
- ½ cup unsalted butter, melted (113g, 4oz)
Cheesecake Filling
- 3 bricks (8 ounces each) cream cheese, softened (750g, 24oz)
- 1 ½ cups powdered sugar (179g, 6.3oz)
- 1 ½ teaspoons vanilla extract
- ½ cup heavy whipping cream (35%) (118ml, 4fl.oz)
- ½ teaspoon each of red, orange, yellow, green, blue, and violet food coloring
Toppings
- Whipped cream (for garnish)
- Sprinkles (for garnish)
Instructions
- Prepare Pan: Line a 9-inch springform pan with parchment paper, trimming any excess to ensure a neat fit.
- Make Crust: In a medium bowl, combine graham cracker crumbs and melted butter until the mixture resembles wet sand and holds when pressed.
- Press Crust: Press the crumb mixture evenly into the bottom of the prepared pan. Refrigerate while preparing the filling.
- Beat Cream Cheese: Using a stand mixer, beat softened cream cheese and powdered sugar until smooth and creamy, about 2 minutes.
- Add Cream and Vanilla: Pour in heavy cream and vanilla extract, continue beating until fluffy, approximately 4 minutes.
- Divide Batter: Split the cheesecake batter evenly into six bowls, about ½ cup each. Add ½ teaspoon of red food coloring to the first bowl and mix well.
- Layer Red: Spread the red-colored batter smoothly over the chilled crust using the back of a spoon.
- Freeze Layer: Freeze the pan for 10-15 minutes to firm up the first layer.
- Repeat for Other Colors: Add orange coloring to the second bowl, mix, then remove pan from freezer and layer orange over red. Freeze 10 minutes. Repeat this process layering yellow, green, blue, and violet colors sequentially, freezing each color layer for 10 minutes before adding the next.
- Chill Fully: After applying the final violet layer, refrigerate the cheesecake for at least 4 hours or overnight to fully set.
- Garnish and Serve: Top the cheesecake with dollops of whipped cream and sprinkle with colorful sprinkles before slicing and serving.
Notes
- Ensure the cream cheese is softened to room temperature for the smoothest batter.
- Freezing each layer before adding the next prevents colors from blending and keeps distinct rainbow layers.
- For easier removal, run a knife around the edges of the springform pan before unlatching.
- You can customize the intensity of the colors by adjusting the amount of food coloring slightly.
- This cheesecake is best served chilled and consumed within 2-3 days for optimal freshness.
