Ingredients
Cake Batter:
- 1 boxed yellow cake mix
- 1 box (small) instant vanilla pudding mix
- 4 eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 1/2 tsp vanilla extract
Cinnamon Nut Topping:
- 1/2 cup sugar
- 1/2 cup chopped nuts (such as walnuts or pecans)
- 1 tsp cinnamon
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a Bundt pan thoroughly to prevent sticking and to ensure easy removal of the cake after baking.
- Make the Cake Batter: In a large mixing bowl, combine the boxed yellow cake mix, instant vanilla pudding mix, eggs, vegetable oil, milk, and vanilla extract. Beat the mixture well until smooth and uniform.
- Prepare Cinnamon Nut Mixture: In a separate bowl, mix together the sugar, chopped nuts, and cinnamon until well combined. This will add a sweet, crunchy layer to your cake.
- Layer the Batter and Topping: Pour a portion of the cake batter into the prepared Bundt pan. Sprinkle some of the cinnamon nut mixture over the batter. Repeat layering until all the batter and cinnamon nut mixture are used, finishing with the cinnamon nut topping on the surface.
- Bake the Cake: Place the Bundt pan in the preheated oven and bake for 40 to 60 minutes. Start checking for doneness at 40 minutes by inserting a toothpick into the center; it should come out clean when the cake is fully baked.
- Cool and Serve: Once baked, allow the cake to cool slightly in the pan before removing it. Serve warm or at room temperature alongside your favorite coffee or tea.
Notes
- You can substitute the chopped nuts with your favorite nuts or omit if allergic.
- Using a Bundt pan helps create a beautiful presentation but a regular round cake pan can be used.
- For a richer flavor, consider adding a teaspoon of almond extract along with the vanilla.
- Ensure the cake is fully cooled before storing to prevent sogginess.
- This coffee cake keeps well for 2-3 days at room temperature or can be refrigerated for up to a week.
