Ingredients
- 2 lbs chicken breast, boneless and skinless
- 1 packet taco seasoning (or homemade seasoning)
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1 cup cream cheese
- 1 cup milk
- 1/2 cup salsa
- 1 tablespoon jalapeno, finely chopped (optional for extra spice)
- 1 tablespoon lime juice
- 10 small flour tortillas
- Fresh cilantro, for garnish
- Avocado slices, for garnish (optional)
- Sour cream, for garnish (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Cook chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Remove and shred the chicken.
- In the same skillet, melt the cream cheese, then stir in shredded cheddar cheese, milk, salsa, and jalapenos (optional). Stir until smooth and creamy.
- Add the shredded chicken back into the skillet and stir to combine. Let it absorb the sauce for 2 minutes.
- Warm the tortillas in a separate skillet or microwave until soft.
- Assemble tacos by spooning the queso chicken mixture into the warm tortillas. Garnish with fresh cilantro, avocado slices, and sour cream. Serve immediately.
Notes
- For extra spice, add more jalapenos or hot sauce to the chicken mixture.
- Substitute chicken with sautéed mushrooms or black beans for a vegetarian option.
- Can be made in a slow cooker by cooking chicken and seasoning for 6-7 hours, then adding cream cheese, cheese, and salsa.
- Dairy-free alternatives available with plant-based cream cheese and cheese.
- Leftovers can be stored for up to 3 days and reheated in a skillet or microwave.
