Description

Queso Chicken Tacos combine creamy queso sauce and tender, flavorful chicken for a delicious and satisfying meal. Quick to prepare, these cheesy tacos are perfect for taco nights, casual gatherings, or any occasion. Garnished with fresh cilantro, avocado, and sour cream, they’re a guaranteed crowd-pleaser. Perfect for families and entertaining!

Ingredients

  • 2 lbs chicken breast, boneless and skinless
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese
  • 1 cup milk
  • 1/2 cup salsa
  • 1 tablespoon jalapeno, finely chopped (optional for extra spice)
  • 1 tablespoon lime juice
  • 10 small flour tortillas
  • Fresh cilantro, for garnish
  • Avocado slices, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Cook chicken breasts until golden brown and fully cooked, about 6-7 minutes per side. Remove and shred the chicken.
  2. In the same skillet, melt the cream cheese, then stir in shredded cheddar cheese, milk, salsa, and jalapenos (optional). Stir until smooth and creamy.
  3. Add the shredded chicken back into the skillet and stir to combine. Let it absorb the sauce for 2 minutes.
  4. Warm the tortillas in a separate skillet or microwave until soft.
  5. Assemble tacos by spooning the queso chicken mixture into the warm tortillas. Garnish with fresh cilantro, avocado slices, and sour cream. Serve immediately.

Notes

  • For extra spice, add more jalapenos or hot sauce to the chicken mixture.
  • Substitute chicken with sautéed mushrooms or black beans for a vegetarian option.
  • Can be made in a slow cooker by cooking chicken and seasoning for 6-7 hours, then adding cream cheese, cheese, and salsa.
  • Dairy-free alternatives available with plant-based cream cheese and cheese.
  • Leftovers can be stored for up to 3 days and reheated in a skillet or microwave.
