Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda

Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in pumpkin purée, egg, and vanilla extract until combined.
- Gradually add dry ingredients to wet mixture, stirring until a soft dough forms.
- Scoop dough onto prepared baking sheet with a tablespoon or cookie scoop, spacing about 2 inches apart.
- Bake 10–12 minutes, until edges are lightly golden and centers are set.
- Cool on baking sheet for a few minutes, then transfer to wire rack to cool completely.
Notes
- Store in an airtight container with a slice of bread to keep cookies soft.
- Refrigerate dough up to 24 hours for deeper flavor and reduced spreading.
- Freeze dough balls for up to 3 months — bake from frozen, adding 1–2 minutes to baking time.
- Add chocolate chips, pecans, or a glaze for variations.
