 - ½ cup (100 g) packed light brown sugar
 - 1 egg yolk, room temperature
 - 2 teaspoons pure vanilla extract
 - ½ cup (125 g) 100% pure pumpkin puree
 
Instructions
- Whisk dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and pumpkin pie spice until evenly combined. Set aside.
 - Beat butter and sugars: Using an electric mixer or hand mixer, beat the room temperature butter, granulated sugar, and brown sugar on medium-high speed for about 3 minutes until the mixture is light and fluffy.
 - Mix in wet ingredients: Add the egg yolk, vanilla extract, and pumpkin puree to the butter and sugar mixture. Mix until everything is well combined, scraping down the sides of the bowl as needed to ensure an even mixture.
 - Combine wet and dry ingredients: Gradually add the flour mixture to the wet ingredients and mix gently until just combined. Avoid over-mixing to keep the cookies tender.
