Ingredients
- Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 3/4 cup cold unsalted butter, cubed
Pumpkin Filling:
- 1 can (15 oz) pumpkin puree (unsweetened)
- 2 large eggs
- 1/2 cup granulated sugar
- 2 tsp pumpkin spice blend (cinnamon, nutmeg, ginger, cloves)
- 1/4 tsp salt
- 1 can (12 oz) evaporated milk
- 1 tsp vanilla extract
Pecan Topping:
- 1 1/2 cups chopped pecans
- 1/2 cup brown sugar
- 1/4 cup unsalted butter, melted
- 2 tbsp heavy cream or evaporated milk
- 1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- In a bowl, mix flour and brown sugar for the crust. Cut in cold butter until mixture resembles coarse crumbs. Press evenly into the prepared pan.
- Bake crust for 15 minutes, then set aside.
- In a large bowl, whisk pumpkin puree, eggs, granulated sugar, pumpkin spice, salt, evaporated milk, and vanilla until smooth. Pour over baked crust.
- Bake for 25–30 minutes, or until filling is set.
- While filling bakes, mix pecans, brown sugar, melted butter, cream, and vanilla in a bowl.
- Spread pecan topping evenly over baked pumpkin layer.
- Return to oven and bake for 15–20 minutes, until topping is bubbly and caramelized.
- Cool completely before cutting into bars.
