Ingredients
Pudding Layer
- 2 (3.9 ounce) boxes instant chocolate pudding mix
- 4 cups whole milk
Cookie Crumbs
- 13.29 ounce package Oreo cookies
Toppings and Decoration
- Mellowcreme pumpkin candies (such as Brach’s brand), amount as desired for decoration
- 16 ounce tub white frosting
- Yellow food coloring (8-10 drops)
- Green food coloring (5-7 drops)
- Fresh mint leaves (optional, for garnish)
Instructions
- Make the pudding: In a large mixing bowl, whisk together the instant chocolate pudding mix and whole milk until smooth and creamy. Some small lumps are okay. Cover and refrigerate for at least 30 minutes to allow the pudding to set.
- Prepare the cookie crumbs: While the pudding chills, crush the Oreo cookies into fine crumbs using a food processor or by placing them in a sealed plastic bag and crushing with a rolling pin or heavy object.
- Layer pudding and crumbs: Remove the pudding from the refrigerator. Spread half of the pudding evenly into the bottom of a 9×13-inch baking dish. Sprinkle half of the Oreo cookie crumbs evenly over the pudding layer.
- Repeat layers: Add the remaining half of the pudding on top of the cookie crust, then sprinkle the remaining Oreo crumbs evenly over this second pudding layer.
- Add pumpkin candies: Arrange mellowcreme pumpkin candies on top of the final cookie crumb layer in your preferred pattern to create the look of a pumpkin patch.
- Color the frosting: In a small bowl, combine the white frosting with yellow and green food coloring. Mix thoroughly by hand or with an electric mixer until the color is evenly blended, producing a natural vine color.
- Pipe vines: Fit a piping bag or a gallon-sized Ziploc bag with a round piping tip or cut a corner off the bag. Fill the bag with the colored frosting. Pipe vine shapes around the pumpkin candies to create a decorative pumpkin patch effect.
- Garnish (optional): For a more realistic pumpkin patch appearance, arrange fresh mint leaves around the vines to mimic leaves.
- Chill and serve: Cover the dish and refrigerate for at least 30 minutes before serving to set the frosting and allow flavors to meld.
Notes
- The pudding can have a few lumps and still set properly.
- If you don’t have a piping bag, a Ziploc bag with the corner cut works well for piping the frosting vines.
- Fresh mint leaves are optional but add a nice touch of color and visual appeal as pumpkin leaves.
- This dessert is best served chilled but can be stored covered in the refrigerator for up to 2 days.
- Use a 9×13-inch baking dish for optimal layering and presentation.
