Ingredients
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup old-fashioned rolled oats (optional)
- 1/2 cup chocolate chips or chopped nuts (optional)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, beat the softened butter and sugar together until creamy and smooth.
- Add the pumpkin puree, egg, and vanilla extract to the mixture, and beat until fully combined.
- In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
- If using oats, chocolate chips, or nuts, fold them into the batter at this point.
- Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- If you want a richer flavor, drizzle the cookies with melted chocolate or add a swirl of cream cheese frosting.
- If you prefer softer cookies, don’t overmix the dough and be sure to bake until the edges are just starting to turn golden brown.
