Description

Ingredients

1 1/2 cups whole wheat flour or oat flour
1/2 cup vanilla protein powder
1 teaspoon baking soda

1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup canned pumpkin puree
2 large eggs
1/3 cup maple syrup or honey
1/4 cup unsweetened almond milk or milk of choice
1 teaspoon vanilla extract
1/2 cup dark chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, protein powder, baking soda, baking powder, salt, and spices.
  3. In another bowl, combine pumpkin puree, eggs, maple syrup, almond milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined. Avoid overmixing.
  5. Fold in the chocolate chips.
  6. Divide batter evenly among muffin cups, filling each about 3/4 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
