Ingredients

- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar

- For the filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup sour cream
- 1 1/2 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 3 large eggs
Instructions
- Preheat oven to 325°F (163°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang for easy lifting.
- Mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 10 minutes, then cool slightly.
- In a large bowl, beat softened cream cheese until smooth.
- Add pumpkin puree, sugars, sour cream, vanilla, pumpkin pie spice, cinnamon, and salt. Mix until fully combined.
- Add eggs one at a time, mixing just until incorporated. Do not overmix.
- Pour the filling over the crust and smooth the top.
- Bake for 40–45 minutes, or until the center is set but slightly jiggly.
- Turn off oven, crack the door, and let bars cool inside for 1 hour.
- Transfer to refrigerator and chill at least 4 hours or overnight.
- Lift bars from pan using parchment, then slice into squares and serve chilled.
