Description
Pumpkin Cake with Applesauce is a moist, spiced cake that combines the richness of pumpkin with the natural sweetness of applesauce. It’s a perfect fall dessert that’s both tender and flavorful.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger (optional)
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1 cup pumpkin puree
- 1/2 cup brown sugar, packed
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts or pecans (optional)
- Powdered sugar, for dusting (optional)
Instructions
Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch square pan or a similar-sized baking dish.
- Mix dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger (if using), and salt.
- Combine wet ingredients: In a large bowl, combine the applesauce, pumpkin puree, brown sugar, oil, eggs, and vanilla extract. Whisk until smooth and fully combined.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Add nuts (optional): If you’re using nuts, fold them into the batter gently.
- Fill the pan: Pour the batter into the prepared pan and spread it evenly.
- Bake: Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool: Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Finish: Once cooled, dust the top with powdered sugar for an added touch of sweetness, if desired. Slice and serve!
Notes
- For a creamier texture, add a cream cheese frosting or a simple glaze on top.
- Feel free to adjust the spices according to your preference—more cinnamon or ginger can add extra warmth to the cake.
- This cake is also delicious without nuts, but you can add them for an extra crunch.
