Pomegranate Chipotle Protein Fudge is a no-bake, vegan-friendly treat that blends smoky chipotle heat with tangy pomegranate sweetness in a high-protein base. Rich, fudgy, and unique, it’s perfect as a healthy dessert or energizing snack.
Ingredients
- 1 cup plant-based protein powder (vanilla or chocolate)
- 1/4 cup cocoa powder
- 1/2 cup nut butter (almond, peanut, or cashew)
- 1/4 cup coconut oil
- 1/4 cup maple syrup or agave nectar
- 2 tbsp pomegranate molasses or reduced pomegranate juice
- 1/2 to 1 tsp chipotle powder (adjust to taste)
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- Optional toppings: pomegranate seeds, chopped nuts, dark chocolate chips
Instructions
In a mixing bowl, combine protein powder and cocoa powder.
- In a small saucepan over low heat, melt nut butter and coconut oil until smooth.
- Stir in maple syrup, pomegranate molasses, vanilla extract, chipotle powder, and sea salt.
- Pour wet mixture into dry ingredients and stir until smooth and fully combined.
- If too thick, add a splash of plant milk or more pomegranate molasses.
- Line a small baking dish with parchment paper.
- Spread mixture evenly into dish and top with pomegranate seeds, nuts, or chocolate chips if desired.
- Freeze for 30–45 minutes until firm.
- Slice into 12 squares and store in the fridge or freezer.
Notes
- For nut-free, use sunflower seed butter or tahini.
- Increase chipotle powder or add cayenne for more heat.
- For extra chocolate flavor, mix in melted dark chocolate.
- Best stored chilled to maintain fudge texture.
