Description

Pizookie is a warm, gooey, and indulgent dessert that combines a giant, freshly baked cookie with cold, creamy ice cream. Soft and chewy in the middle with crispy edges, it’s the ultimate treat for any occasion.

Ingredients

  1. For the cookie:
  2. 1 cup unsalted butter, softened
  3. 1 cup brown sugar, packed
  4. 1/2 cup granulated sugar
  5. 2 teaspoons vanilla extract
  6. 2 large eggs
  7. 2 1/2 cups all-purpose flour
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 2 cups chocolate chips (or your preferred mix-ins like nuts, M&Ms, etc.)
  11. For serving:
  12. 12 scoops vanilla ice cream (or flavor of your choice)
  13. Optional: chocolate sauce, whipped cream, or sprinkles for topping

Instructions

Preheat your oven to 350°F (175°C) and grease or line a 10-inch cast-iron skillet or oven-safe baking dish.

  1. In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  2. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chocolate chips (or your preferred mix-ins).
  6. Spread the cookie dough evenly into the prepared skillet or baking dish.
  7. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean (it’s okay if it’s a little soft in the middle—this keeps the cookie gooey).
  8. Remove from the oven and let it cool for a few minutes.
  9. Top with a scoop of ice cream and your favorite toppings, such as chocolate sauce, whipped cream, or sprinkles, and serve warm.

Notes

  1. For variations, try different cookie doughs like oatmeal raisin, peanut butter, or snickerdoodle.
  2. Add a cup of chopped nuts for some extra crunch, or fresh fruit like berries for a fruity twist.
  3. For a fudgy version, use brownie batter instead of cookie dough.
  4. If you don’t have a cast-iron skillet, any oven-safe dish can be used; adjust baking time accordingly.
  5. Reheat the Pizookie in the oven at 350°F (175°C) for about 5-10 minutes if you want to enjoy it again.
