A pizookie, or ‘pizza cookie’, is a warm, gooey, skillet-baked cookie with crisp edges and a soft center, often served topped with melting ice cream. It’s a quick, crowd-pleasing dessert that’s rich, comforting, and endlessly customizable.
Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 3/4 cup semi-sweet chocolate chips
- Ice cream, for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a small bowl, whisk together the flour, baking soda, and salt.
- In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, and mix until fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
- Fold in the chocolate chips.
- Press the dough evenly into a greased oven-safe skillet (6–8 inches wide).
- Bake for 18–22 minutes, or until the edges are golden and the center is just set but still soft.
- Remove from the oven and let it cool slightly.
- Serve warm, topped with a scoop of ice cream if desired.
Notes
- Do not overbake if you prefer a gooey center.
- Use different types of chips or candy for variation.
- Chill the dough before baking for a thicker texture.
- Best served fresh but can be reheated in the microwave or oven.
