Description

A pizookie, or ‘pizza cookie’, is a warm, gooey, skillet-baked cookie with crisp edges and a soft center, often served topped with melting ice cream. It’s a quick, crowd-pleasing dessert that’s rich, comforting, and endlessly customizable.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup semi-sweet chocolate chips
  • Ice cream, for topping (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, whisk together the flour, baking soda, and salt.
  3. In a larger bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract, and mix until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  6. Fold in the chocolate chips.
  7. Press the dough evenly into a greased oven-safe skillet (6–8 inches wide).
  8. Bake for 18–22 minutes, or until the edges are golden and the center is just set but still soft.
  9. Remove from the oven and let it cool slightly.
  10. Serve warm, topped with a scoop of ice cream if desired.

Notes

  • Do not overbake if you prefer a gooey center.
  • Use different types of chips or candy for variation.
  • Chill the dough before baking for a thicker texture.
  • Best served fresh but can be reheated in the microwave or oven.
