  • 1 Small Box (3.3 oz.) Pistachio Pudding Mix

Instructions

  1. Chill the Mixing Bowl: Start by placing your mixing bowl in the refrigerator or freezer beforehand so that it is cold. This helps the whipping cream whip faster and better.
  2. Add Whipping Cream: Pour the 2 cups of chilled whipping cream into the cold mixing bowl.
  3. Whip to Soft Peaks: Using a mixer on high speed, whip the cream until soft peaks form. This means when you lift the beaters, the cream holds its shape softly without stiff peaks.
  4. Add Powdered Sugar: Add the 1/3 cup of powdered sugar to the whipped cream to sweeten it, then continue mixing at high speed.
  5. Add Pistachio Pudding Mix: Just before the cream reaches stiff peaks, add the pistachio pudding mix.
  6. Mix Gently: Reduce mixer speed to low and gently mix the pudding into the whipped cream. Stop as soon as it starts to come together to avoid overmixing.
  7. Scrape Sides and Fold: Stop the mixer and scrape down the sides of the bowl to ensure even mixing. Check that the pudding mix hasn’t settled or clumped at the bottom. Fold the mixture gently a couple of times with a spoon to incorporate any residual ingredients smoothly.
  8. Final Light Mix: Briefly turn the mixer on for just a few revolutions to ensure the frosting is smooth and well combined but DO NOT OVERMIX or you risk the cream breaking down.
  9. Decorate: Transfer the frosting into decorating bags fitted with Wilton 2D tips for piping, and decorate your cakes, cupcakes, or desserts as desired.

  • Ensure the whipping cream and mixing bowl are cold for best whipping results.
  • Do not overmix after adding the pudding mix to prevent the cream from turning grainy or separating.
  • This frosting is best used immediately but can be refrigerated for up to 24 hours. Gently re-whip if needed before use.
