Ingredients

  1. 1 can (20 oz) crushed pineapple, with juice
  2. 1 cup granulated sugar
  3. 1 cup all-purpose flour
  4. 2 tsp baking powder
  5. 1/4 tsp salt
  6. 1/2 cup unsalted butter, melted
  7. 8 oz cream cheese, softened
  8. 1 cup milk
  9. 1 tsp vanilla extract
  10. Powdered sugar, for dusting (optional)

Instructions

Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  1. Spread crushed pineapple evenly in the bottom of the dish. Do not drain.
  2. In a bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk, melted butter, and vanilla until smooth.
  3. Pour batter evenly over pineapple without stirring.
  4. Drop spoonfuls of softened cream cheese over the batter.
  5. Bake for 40–45 minutes, until golden brown and bubbly around the edges.
  6. Cool slightly before serving. Dust with powdered sugar if desired.
