Description

Ingredients
- 2 cups fresh or canned pineapple chunks
1 cup coconut milk (full fat for creaminess)
2 tablespoons honey or maple syrup (optional)
1 teaspoon vanilla extract
Juice of half a lime 
Instructions
In a blender, combine pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and lime juice. Blend until smooth.
- Pour the mixture into popsicle molds, leaving a little space at the top.
 - Insert popsicle sticks and freeze for at least 4-6 hours or until fully frozen.
 - To release, run warm water over the molds for a few seconds and gently pull out the popsicles.
 
Notes
- Add shredded coconut flakes to the mixture for texture.
 - Use pineapple juice instead of coconut milk for a lighter popsicle.
 - Mix in chopped fresh mint or basil for a herbal note.
 - Blend in mango or banana for a tropical fruit medley.
