Description

Pineapple Coconut Popsicles are tropical, creamy frozen treats that blend sweet pineapple with rich coconut for a refreshing and indulgent snack. Perfect for warm days, they capture the essence of a piña colada in a healthy, icy form.


Ingredients

  1. 2 cups fresh or canned pineapple chunks
    1 cup coconut milk (full fat for creaminess)
    2 tablespoons honey or maple syrup (optional)
    1 teaspoon vanilla extract
    Juice of half a lime

Instructions

In a blender, combine pineapple chunks, coconut milk, honey or maple syrup, vanilla extract, and lime juice. Blend until smooth.

  1. Pour the mixture into popsicle molds, leaving a little space at the top.
  2. Insert popsicle sticks and freeze for at least 4-6 hours or until fully frozen.
  3. To release, run warm water over the molds for a few seconds and gently pull out the popsicles.

Notes
