Description

Pineapple Chicken is a flavorful and quick dish that combines tender chicken with juicy pineapple, creating a sweet and savory meal in under 30 minutes. This tropical-inspired recipe is perfect for a weeknight dinner or meal prep, and can be served on its own, over rice, or in a wrap for a fun and delicious meal.

Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground ginger

1/4 cup soy sauce (or coconut aminos for a gluten-free version)

1 tablespoon honey

1/2 cup pineapple chunks (fresh or canned, drained if using canned)

1/4 cup red bell pepper, diced (optional for added color)

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Instructions

  1. powder, onion powder, and ground ginger.

  2. Cook the Chicken: Heat the olive oil in a large skillet over medium heat. Add the seasoned chicken pieces and cook for 6–8 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

  3. Make the Sauce: In the same skillet, add the soy sauce and honey. Stir to combine and bring to a simmer for 2–3 minutes, allowing the sauce to thicken slightly.

  4. Add Pineapple: Add the pineapple chunks and red bell pepper (if using) to the skillet, and stir to coat them in the sauce. Cook for another 2–3 minutes, until the pineapple is warmed through and the sauce has thickened.

  5. Combine Chicken and Sauce: Return the cooked chicken to the skillet and toss to coat with the sauce and pineapple. Let it simmer for another 2 minutes to combine the flavors.

  6. Garnish and Serve: Sprinkle chopped green onions and sesame seeds over the top before serving. Enjoy the Pineapple Chicken on its own or with your favorite side dish.

Notes

  • Spicy Pineapple Chicken: Add a diced jalapeño or red pepper flakes to the sauce for a spicy kick.

  • Grilled Pineapple Chicken: Grill the chicken and pineapple separately for a smoky flavor before combining them in the skillet.

  • Coconut Pineapple Chicken: Add a splash of coconut milk to the sauce for a creamy twist.

  • Pineapple Chicken Stir-Fry: Add more vegetables like broccoli, snap peas, or carrots to create a full stir-fry.

  • Pineapple Chicken Tacos: Serve the pineapple chicken in soft tortillas with avocado, cilantro, and a squeeze of lime for a fun twist.
