Description

Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tsp ginger, grated
  • Salt and pepper, to taste
  • ¼ cup green onions, sliced
  • 1 tbsp sesame seeds

Instructions

Heat olive oil in a large skillet over medium heat. Add chicken cubes and cook until golden brown and cooked through. Remove and set aside.
2️⃣ In the same skillet, sauté onion, garlic, and red bell pepper until softened.
3️⃣ Add pineapple and cook for another 2 minutes.
4️⃣ Stir in jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring to a boil.
5️⃣ Reduce heat to low, cover, and simmer for 18-20 minutes until the rice is fully cooked.
6️⃣ Return cooked chicken to the skillet, stir well, and heat through.
7️⃣ Garnish with green onions and sesame seeds. Serve hot and enjoy!
