Ingredients
- 1 can (20 oz) pineapple chunks, drained
- 1 can (8 oz) crushed pineapple, drained
- 1/2 cup granulated sugar or brown sugar
- 3 tablespoons all-purpose flour
- 1 1/2 cups sharp cheddar cheese, shredded
- 1 sleeve buttery round crackers (about 30 crackers), crushed
- 1/2 cup unsalted butter, melted
Instructions
Preheat oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
- In a large bowl, combine drained pineapple chunks and crushed pineapple.
- Add sugar, flour, and shredded cheddar cheese. Stir until well combined.
- Transfer the mixture to the prepared baking dish and spread evenly.
- In a separate bowl, mix the crushed crackers with melted butter.
- Sprinkle the buttery cracker topping evenly over the pineapple mixture.
- Bake for 30–35 minutes, or until golden brown and bubbly.
- Allow to cool slightly before serving warm.
Notes
- Use freshly shredded cheddar cheese for the best flavor and melt.
- Add the cracker topping right before baking to maintain crispness.
- Substitute brown sugar for a deeper, caramel-like sweetness.
- Can be served warm as a side or at room temperature as a dessert.
- Not ideal for freezing due to potential sogginess after thawing.
