Description

Pineapple Casserole is a unique Southern dish that blends sweet pineapple, sharp cheddar cheese, and a crunchy buttery cracker topping. It’s a deliciously comforting bake that works equally well as a side dish or dessert for any occasion.

Ingredients

  1. 1 can (20 oz) pineapple chunks, drained
  2. 1 can (8 oz) crushed pineapple, drained
  3. 1/2 cup granulated sugar or brown sugar
  4. 3 tablespoons all-purpose flour
  5. 1 1/2 cups sharp cheddar cheese, shredded
  6. 1 sleeve buttery round crackers (about 30 crackers), crushed
  7. 1/2 cup unsalted butter, melted

Instructions

Preheat oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.

  1. In a large bowl, combine drained pineapple chunks and crushed pineapple.
  2. Add sugar, flour, and shredded cheddar cheese. Stir until well combined.
  3. Transfer the mixture to the prepared baking dish and spread evenly.
  4. In a separate bowl, mix the crushed crackers with melted butter.
  5. Sprinkle the buttery cracker topping evenly over the pineapple mixture.
  6. Bake for 30–35 minutes, or until golden brown and bubbly.
  7. Allow to cool slightly before serving warm.

Notes

  • Use freshly shredded cheddar cheese for the best flavor and melt.
  • Add the cracker topping right before baking to maintain crispness.
  • Substitute brown sugar for a deeper, caramel-like sweetness.
  • Can be served warm as a side or at room temperature as a dessert.
  • Not ideal for freezing due to potential sogginess after thawing.
