Description

Pie Maker Lamingtons are bite-sized versions of the iconic Australian dessert, cooked in a pie maker for speed and convenience. These fluffy mini cakes are dipped in chocolate icing, rolled in coconut, and ready in minutes—perfect for entertaining or a quick sweet fix.


Ingredients

  1. 1 cup self-raising flour
  2. 1/2 cup caster sugar
  3. 2 eggs
  4. 1/2 cup milk
  5. 1 tsp vanilla extract
  6. 2 tbsp melted butter
  7. 2 tbsp cocoa powder
  8. 1 1/2 cups icing sugar
  9. 23 tbsp boiling water
  10. 1 tbsp butter (for icing)
  11. 1 cup desiccated coconut

Instructions

Preheat pie maker.

  1. Whisk eggs and sugar in a bowl until light and fluffy.
  2. Mix in milk, vanilla, and melted butter.
  3. Gently fold in self-raising flour until batter is smooth.
  4. Spoon batter into pie maker wells, filling 3/4 full.
  5. Cook 4–6 minutes until golden and cooked through. Cool on wire rack.
  6. For icing, whisk cocoa, icing sugar, boiling water, and butter until smooth.
  7. Dip cooled cakes in chocolate icing, letting excess drip off.
  8. Roll in desiccated coconut until fully coated.
  9. Set on rack or parchment before serving.

  • Use two forks to make dipping and coating easier.
  • Cool cakes fully before dipping to prevent crumbling.
