Pie Maker Lamingtons are bite-sized versions of the iconic Australian dessert, cooked in a pie maker for speed and convenience. These fluffy mini cakes are dipped in chocolate icing, rolled in coconut, and ready in minutes—perfect for entertaining or a quick sweet fix.
Ingredients
- 1 cup self-raising flour
- 1/2 cup caster sugar
- 2 eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 2 tbsp melted butter
- 2 tbsp cocoa powder
- 1 1/2 cups icing sugar
- 2–3 tbsp boiling water
- 1 tbsp butter (for icing)
- 1 cup desiccated coconut
Instructions
Preheat pie maker.
- Whisk eggs and sugar in a bowl until light and fluffy.
- Mix in milk, vanilla, and melted butter.
- Gently fold in self-raising flour until batter is smooth.
- Spoon batter into pie maker wells, filling 3/4 full.
- Cook 4–6 minutes until golden and cooked through. Cool on wire rack.
- For icing, whisk cocoa, icing sugar, boiling water, and butter until smooth.
- Dip cooled cakes in chocolate icing, letting excess drip off.
- Roll in desiccated coconut until fully coated.
- Set on rack or parchment before serving.
Notes
- Use two forks to make dipping and coating easier.
- Cool cakes fully before dipping to prevent crumbling.
- Desiccated coconut gives the most authentic texture.
