Ingredients
- 1 1/2 cups pickle juice (from your favorite pickles)
1/2 cup water (optional, to dilute the brine if it’s too strong)
1 tablespoon honey or sugar (optional, to balance the tanginess)
2–3 small pickle spears, chopped into small pieces (optional, for added texture)
Instructions
Prepare the popsicle mixture: In a bowl, combine the pickle juice and water. If desired, stir in honey or sugar until dissolved for a touch of sweetness.
- Add texture (optional): Chop 2-3 pickle spears into small pieces and stir them into the pickle juice mixture.
- Pour into molds: Pour the pickle juice mixture into popsicle molds, filling each mold almost to the top. If adding pickle chunks, ensure they are evenly distributed.
- Insert sticks: Place sticks into the molds and make sure they are centered.
- Freeze: Put the molds in the freezer for at least 4 hours or until fully frozen.
- Unmold and serve: To remove popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and serve!
Notes
- For extra spice, add hot sauce, cayenne pepper, or chili flakes to the pickle juice.
- For a more refreshing version, add a squeeze of lemon juice to the mixture.
- These popsicles can be stored in the freezer for up to a month.
