Description

Pesto Flatbread Pizza is a quick and delicious twist on traditional pizza. With a crispy flatbread base, topped with fragrant pesto sauce, fresh mozzarella, and your favorite toppings, this dish is packed with flavor and perfect for a light meal or appetizer.

Ingredients

  1. 2 flatbreads (store-bought or homemade)
1/4 cup pesto sauce (store-bought or homemade)
1 cup fresh mozzarella cheese, shredded or sliced
    1/4 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1 tablespoon olive oil (for drizzling)
    Salt and pepper, to taste
Fresh basil leaves (optional, for garnish)

Instructions

Preheat your oven to 400°F (200°C).

  1. Place the flatbreads on a baking sheet lined with parchment paper.
  2. Spread a generous layer of pesto sauce over each flatbread, leaving a small border around the edges.
  3. Sprinkle the shredded or sliced mozzarella evenly over the pesto-covered flatbread.
  4. Add the halved cherry tomatoes and thinly sliced red onion on top of the cheese.
  5. Drizzle a little olive oil over the top and season with salt and pepper.
  6. Bake in the preheated oven for 10-12 minutes, or until the flatbread is golden and crispy, and the cheese is melted and bubbly.
  7. Once baked, remove from the oven and garnish with fresh basil leaves if desired.
  8. Slice and serve immediately.

Notes

  1. Add protein: Grilled chicken, bacon, or prosciutto are great additions to your pesto flatbread pizza.
  2. Vegetarian: Add more vegetables like roasted bell peppers, spinach, or mushrooms for a veggie-packed version.
  3. Cheese alternatives: Try using goat cheese, feta, or even a dairy-free cheese option to switch things up.
  4. Spicy kick: Add a few red pepper flakes or drizzle some hot honey on top for a bit of heat.
