Description

This Pesto Crusted Salmon is an easy yet elegant dish featuring tender, flaky salmon topped with a crispy, herbaceous pesto coating. With just a handful of ingredients, this recipe delivers restaurant-quality flavor in under 30 minutes—perfect for weeknights or special occasions!

Ingredients

  • 4 salmon fillets
  • ½ cup pesto (store-bought or homemade)
  • ¼ cup grated Parmesan cheese
  • ¼ cup breadcrumbs (panko recommended for extra crunch)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving (optional)

Instructions

  • Preheat Oven & Prep Baking Sheet:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Season the Salmon:

    • Pat the salmon fillets dry with a paper towel.
    • Season both sides with salt and pepper.
  • Make the Pesto Crust:

    • In a small bowl, mix pesto, Parmesan cheese, and breadcrumbs until well combined.
  • Coat the Salmon:

    • Spread the pesto mixture evenly over the top of each salmon fillet.
    • Press lightly to help it adhere.
    • Drizzle a little olive oil over the top to help it crisp up.
  • Bake:

    • Place the salmon fillets on the prepared baking sheet.
    • Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Serve:

    • Serve immediately with lemon wedges for added brightness.

Notes

  • For extra flavor: Add minced garlic to the pesto mixture before spreading it on the salmon.
  • For a crunchier crust: Use extra Parmesan and breadcrumbs.
  • For a spicier version: Sprinkle red pepper flakes over the pesto before baking.
  • Alternative cooking method: This recipe can also be made on the grill—cook for 4-5 minutes per side over medium heat.
