Ingredients

4 boneless, skinless chicken breasts or thighs
1/4 cup olive oil
Salt and black pepper, to taste
1/2 cup homemade or store-bought pesto (see below for pesto ingredients)
1/4 cup freshly grated Parmesan cheese (optional, for topping)
Fresh basil leaves (optional, for garnish)
For the Pesto:
2 cups fresh basil leaves
1/4 cup pine nuts (or walnuts)
2 cloves garlic
1/2 cup extra virgin olive oil
1/4 cup Parmesan cheese

Prepare the Chicken:

Preheat your oven to 400°F (200°C) if baking, or heat a large skillet over medium-high heat if pan-searing.

Season the chicken breasts with olive oil, salt, and pepper.

Cooking the Chicken:

Baking: Place the chicken breasts on a baking sheet and spread a thin layer of pesto on top of each chicken breast. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).

Pan-Seared: Heat olive oil in a skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side until browned and cooked through. After flipping the chicken, spread a spoonful of pesto on top of each chicken breast and cook for an additional 1-2 minutes to warm the pesto.

Prepare the Pesto (if making homemade):

In a food processor or blender, combine the basil leaves, pine nuts, garlic, and Parmesan cheese.
