Description

A refreshing and nutrient-packed kiwi smoothie featuring Greek yogurt, fresh kiwi, banana, baby spinach or kale, and frozen pineapple chunks. Perfect for a quick breakfast or healthy snack, this smoothie combines creamy texture with vibrant flavors and is easily adaptable for a vegan diet by substituting coconut milk.

Ingredients

Base

  • 1/2 cup Greek yogurt (or coconut milk for vegan, omit the water if using coconut milk)
  • 1/4 cup water, plus more as needed

Fruits & Greens

  • 2 kiwi, peeled and chopped
  • 2 handfuls baby spinach or kale
  • 1 banana (room temperature), broken into pieces
  • 1 1/2 cups frozen pineapple chunks

Instructions

  1. Prepare Kiwi: Peel the kiwi carefully and chop them into smaller pieces for easier blending.
  2. Add Ingredients to Blender: Place the liquids first—Greek yogurt and water (or just coconut milk if vegan)—into the blender. Then add the chopped kiwi, banana pieces, baby spinach or kale, and frozen pineapple chunks.
  3. Blend the Smoothie: Blend all ingredients on high speed until smooth and creamy. If the mixture is too thick, add a splash more water to reach your desired consistency.
  4. Serve or Store: Pour the smoothie into a glass and enjoy immediately for the best taste and texture, or store in a covered jar in the refrigerator for up to one day.

Notes

  • Use coconut milk instead of Greek yogurt for a vegan alternative and omit added water to maintain creaminess.
  • Frozen pineapple chunks help chill the smoothie without diluting the flavor.
  • For extra protein, add a scoop of your preferred protein powder.
  • To boost fiber, consider including the kiwi seeds which are edible and nutritious.
  • Drink immediately for the freshest taste, as the smoothie may separate if stored longer than a day.
