Description
A refreshing and nutrient-packed kiwi smoothie featuring Greek yogurt, fresh kiwi, banana, baby spinach or kale, and frozen pineapple chunks. Perfect for a quick breakfast or healthy snack, this smoothie combines creamy texture with vibrant flavors and is easily adaptable for a vegan diet by substituting coconut milk.
Ingredients
Base
- 1/2 cup Greek yogurt (or coconut milk for vegan, omit the water if using coconut milk)
- 1/4 cup water, plus more as needed
Fruits & Greens
- 2 kiwi, peeled and chopped
- 2 handfuls baby spinach or kale
- 1 banana (room temperature), broken into pieces
- 1 1/2 cups frozen pineapple chunks
Instructions
- Prepare Kiwi: Peel the kiwi carefully and chop them into smaller pieces for easier blending.
- Add Ingredients to Blender: Place the liquids first—Greek yogurt and water (or just coconut milk if vegan)—into the blender. Then add the chopped kiwi, banana pieces, baby spinach or kale, and frozen pineapple chunks.
- Blend the Smoothie: Blend all ingredients on high speed until smooth and creamy. If the mixture is too thick, add a splash more water to reach your desired consistency.
- Serve or Store: Pour the smoothie into a glass and enjoy immediately for the best taste and texture, or store in a covered jar in the refrigerator for up to one day.
Notes
- Use coconut milk instead of Greek yogurt for a vegan alternative and omit added water to maintain creaminess.
- Frozen pineapple chunks help chill the smoothie without diluting the flavor.
- For extra protein, add a scoop of your preferred protein powder.
- To boost fiber, consider including the kiwi seeds which are edible and nutritious.
- Drink immediately for the freshest taste, as the smoothie may separate if stored longer than a day.
