Description

Peppermint Bark Popcorn is a festive holiday treat combining the crunch of popcorn with the sweetness of white chocolate and the refreshing taste of peppermint. It’s perfect for parties, gifts, or as a cozy winter snack.

Ingredients

  1. 10 cups popped popcorn (about 1/2 cup kernels)
  2. 12 oz white chocolate chips (or white chocolate melts)
  3. 1/2 teaspoon peppermint extract
  4. 1/2 cup crushed peppermint candies or candy canes (about 45 candy canes)
  5. 1/4 teaspoon sea salt (optional, for a sweet-salty contrast)

Instructions

Pop the popcorn: Pop the popcorn and place it in a large mixing bowl. Remove any unpopped kernels.

  1. Melt the white chocolate: In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring between each, until fully melted. Stir in peppermint extract once melted.
  2. Coat the popcorn: Pour the melted white chocolate over the popcorn and gently toss to coat.
  3. Add the crushed peppermint: Immediately sprinkle crushed peppermint over the popcorn, then toss again. Optionally, sprinkle sea salt for a sweet-salty contrast.
  4. Set and cool: Spread the popcorn on a baking sheet lined with parchment paper and allow it to cool for 30 minutes to 1 hour. For faster cooling, refrigerate for 15-20 minutes.
  5. Serve and enjoy: Once set, break the popcorn into pieces and serve. Store in an airtight container for up to 1 week.

Notes

  • Add nuts like almonds or pecans for extra crunch.
  • Dark chocolate drizzle adds richness if desired.
  • Sprinkles can add a colorful holiday touch.
