Instructions

  1. Prepare the filling: Spread the peanut butter evenly across one side of each tortilla. Then, layer the sliced banana and strawberries over the peanut butter. If you like, drizzle a little honey over the fruit for extra sweetness and sprinkle with a pinch of cinnamon for added flavor.
  2. Assemble the quesadilla: Place the second tortilla on top of the filled one, pressing down gently to hold everything together.
  3. Cook the quesadilla: Heat the butter in a skillet over medium heat. Once the butter is melted and sizzling, carefully place the quesadilla in the skillet. Cook for 2-3 minutes on one side, pressing down gently with a spatula. When the bottom is golden and crispy, flip the quesadilla and cook the other side for another 2-3 minutes until golden brown and crispy.
  4. Serve: Remove from the skillet and let it cool for a minute before slicing it into wedges. Serve immediately, either on its own or with a side of yogurt, whipped cream, or additional fruit.

Notes

  • Vegan: Use a dairy-free tortilla and peanut butter, and substitute vegan butter or oil for frying. Skip the honey or use agave syrup.
  • Nut-Free: For a nut-free version, replace the peanut butter with sunflower seed butter or another nut-free spread.
  • Chocolate Twist: Add chocolate chips or a drizzle of melted chocolate inside the quesadilla for a dessert version.
  • Add Yogurt: Serve with a dollop of Greek yogurt or whipped cream on the side for extra creaminess.
  • Other Fruit: You can swap the strawberries and bananas for other fruits like blueberries, raspberries, or sliced apples for a different flavor profile.
