Ingredients

Cereal Base

  • ½ cup brown sugar (packed)
  • ½ cup corn syrup
  • ¾ cup smooth peanut butter
  • 2 cups Rice Krispies
  • 2 cups cornflakes (crushed)
  • 1 tsp vanilla extract

Brown Sugar Icing

  • 1 cup brown sugar (packed)
  • 2 tbsp butter or margarine
  • 4-6 tsp cream (or milk)
  • 1 cup icing sugar


Instructions

  1. Prepare Cereal Base: In a medium saucepan, heat the corn syrup and ½ cup packed brown sugar over medium heat, stirring constantly until the sugar is completely dissolved. Remove the pan from heat.
  2. Add Peanut Butter and Vanilla: Stir in the smooth peanut butter and vanilla extract until the mixture is completely smooth and combined.
  3. Mix Cereals: Add the crushed cornflakes and Rice Krispies to the peanut butter mixture. Stir thoroughly to coat all the cereal evenly.
  4. Press Mixture into Pan: Transfer the coated cereal mixture into a greased 9 x 9 inch or 8 x 8 inch pan, pressing it firmly and evenly to create a compact base layer.
  5. Make Brown Sugar Icing: In a small saucepan, combine 1 cup packed brown sugar, 2 tablespoons butter or margarine, and 4 to 6 teaspoons of cream or milk. Bring to a boil and allow to boil for exactly 1 minute. Remove from heat and allow the mixture to cool.
  6. Thicken Icing: Gradually add the 1 cup of icing sugar to the cooled brown sugar mixture, beating with a spoon until the icing thickens. Adjust consistency as needed by adding more icing sugar or cream to ensure it is spreadable.
  7. Spread Icing and Set: Evenly spread the thickened brown sugar icing over the pressed cereal base. Allow the entire dessert to set and cool properly before cutting.
  8. Cut into Squares: Once firm, cut the peanut butter squares into 16 to 36 pieces depending on your preferred size and serve.
