Ingredients

3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract

Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, combine peanut butter, sugar, egg, vanilla extract, baking soda, and salt (if using). Mix until smooth and well combined.
 - Roll dough into 1-inch balls and place on baking sheet.
 - Flatten each ball with a fork, creating a crisscross pattern.
 - Bake for 10-12 minutes until cookies are set but still soft in the center.
 - Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
