Description

Ingredients

  1. 3 ripe bananas, mashed
    1/2 cup peanut butter (creamy or chunky)
    1/2 cup unsalted butter, softened
    1 cup sugar (you can substitute with brown sugar or maple syrup)
    2 large eggs
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 teaspoon cinnamon (optional)
    1/4 cup milk (or any non-dairy milk)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  1. In a large mixing bowl, mash the ripe bananas until smooth.
  2. Add the peanut butter, softened butter, and sugar to the mashed bananas. Mix until everything is well combined.
  3. Beat in the eggs, one at a time, and stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon (if using).
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, starting and ending with the dry ingredients. Stir until just combined – be careful not to overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean (or with just a few moist crumbs).
