Ingredients
- For the raspberry sauce:
1 cup fresh raspberries (or frozen, thawed and drained)
1/4 cup granulated sugar
1 tablespoon lemon juice
For the peach layer:
3–4 ripe peaches, peeled and diced
2 tablespoons honey or sugar (optional)
For the whipped cream (or custard):
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Optional garnish:
Fresh mint leaves
Extra raspberries or peach slices
Instructions
For the Raspberry Sauce:
In a small saucepan, combine raspberries, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and sauce thickens (5-7 minutes). Strain if desired, then cool.
- For the Peach Layer:
Peel and dice the peaches. Toss with honey or sugar if needed, then let sit to release juices. - For the Whipped Cream:
Whip the heavy cream and powdered sugar in a chilled bowl until stiff peaks form. Stir in vanilla extract. - Assemble the Parfaits:
In glasses, layer peaches, raspberry sauce, and whipped cream, repeating until filled. Finish with whipped cream on top. - Garnish:
Top with extra raspberries, peach slices, and mint leaves. Refrigerate for 1-2 hours before serving.
Notes
- Use frozen peaches if fresh is unavailable, but be sure to thaw and drain them properly.
- Make the parfaits ahead of time by assembling the layers and refrigerating.
- For a richer version, substitute whipped cream with mascarpone or cream cheese mixed with sugar.
