Ingredients

  • 2 ripe peaches, peeled and chopped
  • 1 ripe mango, peeled and chopped
  • 2 tbsp sugar (adjust to taste)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch
  • 1 package of pie crusts (store-bought or homemade)
  • 1 egg (for egg wash)
  • Vegetable oil (for frying)

Instructions

  1. Cook the Filling:
    In a medium saucepan, combine the chopped peaches, mangoes, sugar, and lemon juice. Cook over medium heat, stirring occasionally until the fruits soften and break down, about 10 minutes.

  2. Thicken the Filling:
    In a small bowl, dissolve the cornstarch in a tablespoon of water. Add this mixture to the fruit filling and stir until it thickens, about 2-3 minutes. Remove from heat and let it cool.

  3. Prepare the Pies:
    Preheat the oil in a deep frying pan or pot over medium heat. Roll out the pie crusts and cut into rectangles or circles, depending on your preference.

  4. Fill the Crust:
    Spoon a small amount of the cooled peach-mango filling onto the center of each pie crust.

  5. Seal the Pies:
    Fold the crust over the filling, and seal the edges with a fork.

  6. Egg Wash and Fry:
    Brush the top of each pie with a beaten egg. Fry the pies in batches for 3-4 minutes on each side or until golden brown and crispy. Remove from oil and drain excess oil on paper towels.
