Ingredients
- 2 ripe peaches, peeled and chopped
- 1 ripe mango, peeled and chopped
- 2 tbsp sugar (adjust to taste)
- 1 tbsp lemon juice
- 1 tsp cornstarch
- 1 package of pie crusts (store-bought or homemade)
- 1 egg (for egg wash)
- Vegetable oil (for frying)

Cook the Filling:
In a medium saucepan, combine the chopped peaches, mangoes, sugar, and lemon juice. Cook over medium heat, stirring occasionally until the fruits soften and break down, about 10 minutes. -
Thicken the Filling:
In a small bowl, dissolve the cornstarch in a tablespoon of water. Add this mixture to the fruit filling and stir until it thickens, about 2-3 minutes. Remove from heat and let it cool. -
Prepare the Pies:
Preheat the oil in a deep frying pan or pot over medium heat. Roll out the pie crusts and cut into rectangles or circles, depending on your preference. -
Fill the Crust:
Spoon a small amount of the cooled peach-mango filling onto the center of each pie crust. -
Seal the Pies:
Fold the crust over the filling, and seal the edges with a fork. -
Egg Wash and Fry:
Brush the top of each pie with a beaten egg. Fry the pies in batches for 3-4 minutes on each side or until golden brown and crispy. Remove from oil and drain excess oil on paper towels.
