  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup milk

  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, ground cinnamon, and cornstarch. Stir well to coat the peaches evenly and set aside.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir until a thick batter forms.
  5. Transfer the peach mixture to a greased 9×9-inch baking dish.
  6. Drop spoonfuls of the batter over the peaches, covering as much of the surface as possible. Don’t worry if it’s not perfectly covered—some peach will peek through.
  7. Sprinkle the top with a tablespoon of sugar for extra sweetness and a nice crust.
  8. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.
  9. Remove from the oven and let cool for a few minutes before serving.
