Description

A classic Southern peach cobbler with a buttery, biscuit-like topping and a juicy, fruit-filled base, perfect for any occasion.

Ingredients

  1. 4 cups fresh or frozen peaches, peeled and sliced
1/2 cup granulated sugar (more for sweetness, if desired)
    1 tablespoon lemon juice
    1 teaspoon vanilla extract
1 tablespoon cornstarch (optional, for thickening)
    1 cup all-purpose flour
    1/4 cup granulated sugar
    1 tablespoon baking powder
    1/2 teaspoon salt
    1/2 cup milk
    1/4 cup unsalted butter, melted
    1/4 teaspoon ground cinnamon (optional)
    1/4 teaspoon ground nutmeg (optional)

Instructions

Preheat your oven to 375°F (190°C).

  1. In a large bowl, combine the peaches, 1/2 cup sugar, lemon juice, vanilla extract, and cornstarch (if using). Stir gently until the peaches are evenly coated. Transfer the mixture to a greased 9×9-inch baking dish.
  2. In another bowl, mix together the flour, 1/4 cup sugar, baking powder, salt, cinnamon, and nutmeg (if using).
  3. Add the milk and melted butter to the dry ingredients. Stir until just combined. The batter will be thick.
  4. Spoon the batter over the peach mixture in the baking dish. Don’t worry if it doesn’t cover the peaches completely; it will spread as it bakes.
  5. Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbling.
  6. Remove from the oven and let it cool for 10-15 minutes before serving.

Notes

  1. Add a handful of fresh or frozen blueberries, raspberries, or blackberries to the peaches for a mixed berry cobbler.
  2. For an extra crunch, sprinkle the top with a little bit of sugar before baking.
  3. Add a pinch of cardamom or ginger to the peach filling for a warm, spicy flavor.
  4. Use a gluten-free flour blend if you prefer a gluten-free version of this cobbler.
  5. Serve the cobbler with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
