Ingredients
- 4 cups fresh or frozen peaches, peeled and sliced
1/2 cup granulated sugar (more for sweetness, if desired)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch (optional, for thickening)
1 cup all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup unsalted butter, melted
1/4 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
Instructions
Preheat your oven to 375°F (190°C).
- In a large bowl, combine the peaches, 1/2 cup sugar, lemon juice, vanilla extract, and cornstarch (if using). Stir gently until the peaches are evenly coated. Transfer the mixture to a greased 9×9-inch baking dish.
- In another bowl, mix together the flour, 1/4 cup sugar, baking powder, salt, cinnamon, and nutmeg (if using).
- Add the milk and melted butter to the dry ingredients. Stir until just combined. The batter will be thick.
- Spoon the batter over the peach mixture in the baking dish. Don’t worry if it doesn’t cover the peaches completely; it will spread as it bakes.
- Bake for 40-45 minutes, or until the topping is golden brown and the peach filling is bubbling.
- Remove from the oven and let it cool for 10-15 minutes before serving.
Notes
- Add a handful of fresh or frozen blueberries, raspberries, or blackberries to the peaches for a mixed berry cobbler.
